The menu designed for the occasion reflects the identity of the Locanda’s cuisine: recognizable dishes, seasonal ingredients and a balance between tradition and contemporary interpretation.

Among the starters, several dishes express the identity of the kitchen. The baked Tropea onions highlight the natural sweetness of the ingredient through a preparation that focuses on clarity rather than complexity.

The chicken liver terrine with Vin Santo reduction and rosemary tuile revisits one of the most traditional elements of Tuscan cuisine, preserving its rustic character while refining its balance.

The creamed cod with chickpea flatbread and glazed shallots introduces a lighter and more delicate dimension, where creamy textures meet gentle crispness.

Fresh pasta and traditional flavors

Pasta remains a central element of the dining experience.

“Our cappelletti” in capon broth evoke the warmth of festive meals and family traditions, recalling the gestures and flavors that define Tuscan culinary heritage. Semolina pappardelle with wild hare ragù represent another classic expression of the region, with a rich sauce that reflects the game-based traditions of the Chianti countryside.

Alongside these dishes, the squid ink lasagnetta with creamed cod and pistachio pesto introduces a more contemporary balance, combining sea and land flavors in a refined and harmonious way.

The “Fritto della Locanda” brings together boned chicken, rabbit and lamb fried with fresh vegetables, creating a dish that is both crisp and convivial. The braised beef cheek in Sangiovese with pumpkin purée and liquorice offers a deeper and more structured preparation, where the region’s most emblematic wine becomes an essential part of the dish.

Completing the selection is the breaded cod with black olives, creamed potatoes and caper crisps, which adds a lighter maritime note while maintaining richness and balance.
